Green Chile Enchiladas

Recipe Originated by Aunt Sharon Tant

  • 2 Pounds Ground Beef

  • 36 Count Pack White Corn Tortillas (You will only use about 20 to 25)

  • Extra Virgin Olive Oil

  • 1/2 Stick Unsalted Butter

  • 1 Yellow Onion - Chopped

  • Small Block Velveeta Cheese - Cubed

  • 10 Ounces Long Horn Sharp Cheddar Cheese - Cubed

  • 4 Tablespoons Flour

  • 2 Cups Milk - Plus extra for making the cheese sauce creamy later in the process.

  • 4.5 Ounce Can Chopped Green Chiles

  • Fajita Seasoning

 

(1) Preheat oven to 350 degrees.  Spray a 9X13 and 9X9 baking dish with Pam and set aside.

(2) Heat oil in a skillet over medium high heat, sauté onions until tender.  Add ground beef, seasoning with fajita season.  Brown beef completely, set aside - reserving about 1/4 cup to use at the end.

(3) Heat butter in a sauce pan over medium heat; until melted.  Add flour, whisking continuously, cook for 1-2 minutes.  Add milk and
