
French Breakfast Puffs

3 Cups Flour

3 Teaspoons Baking Powder

1 Teaspoon Salt

1/2 Teaspoon Ground Nutmeg

1 Cup Sugar

2/3 Cup Shortening (Crisco)

2 Large Eggs

1 Cup Whole Milk

1 1/2 Cups Sugar

3 Teaspoons Roasted Ground Cinnamon

2 Sticks Unsalted Butter
(1) Preheat oven to 350 degrees. Lightly grease 12 muffin cup pan or several mini muffin pans.
(2) In a large bowl stir together flour, baking powder, salt and nutmeg. Set aside.
(3) In a different bow, cream together 1 cup sugar and shortening. Then add eggs and mix again. Add flour mixture and milk alternately to creamed mixture, beating well after each addition (end with milk).
(4) Fill prepared cups 2/3 full. Bake at for 20-25 minutes or until golden.
(5) In a bowl, melt 2 sticks of butter. In a separate bow combine remaining sugar and cinnamon. Dip baked muffins in butter, coating well, then coat with cinnamon-sugar mixture.
Sent these to school with my little man (using mini muffin tins), for his Christmas party. A little boy asked him if he could have another, Allen told him no because he wanted to take the leftovers home. Bahaha - gotta love him!
