
Cheesy Hash Brown Casserole

2 Tablespoons Unsalted Butter

1 Tablespoon Extra Virgin Olive Oil

1 Yellow Onion - Finely Chopped

10 3/4 Ounce 98% Fat Free Cream of Mushroom Soup

16 Ounces Sour Cream
-
1 Pound Smoked Ham - Diced

2 Pounds Frozen Hash Browns - Thawed

2 Cups Mild Cheddar Cheese - Shredded

1 Cup Crushed Potato Chips - Equal to About 1 Small Bag

1/4 Cup Unsalted Butter - Melted, To Drizzle @ the End
(1) Preheat oven to 350 degrees.
(2) Heat butter and olive oil in a skillet over medium high heat. Add onion and saute until they start to caramelize. In a large bowl fold together all ingredients - excluding the crushed potato chips and 1/4 cup of melted butter. Spoon mixture into a 9X13 lightly greased baking dish. Bake, uncovered, for 45 minutes.
(3) Cover with potato chips and drizzle the melted butter over the top. Bake for an additional 20 minutes.
This is awesome when you replace the ham with Jimmy Dean sausage.
