Best Taco Filling

Recipe Originated by Angela Harcrow

  • 1 Yellow Onion - Finely Diced

  • 1 Jalapeno - Seeds Removed/Finely Diced

  • 2 Garlic Cloves - Minced

  • 2 Tablespoons Unsalted Butter

  • 2 Tablespoon Extra Virgin Olive Oil

  • 1 Pound Ground Beef

  • 15 Ounce Can Ranch Style Beans

  • Approximately 1 Cup Low Sodium Beef Broth

  • 1 Cup Shredded Monterrey Jack Cheese

  • Kosher Salt

  • Ground Black Pepper

  • Small Handful Cilantro - Finely Chopped

 

(1)  Heat 1 tablespoon oil in a skillet over medium high heat; add ground beef, salt and pepper to taste.  Brown completely and remove from skillet.

(2)  Heat remaining oil and butter to the skillet over medium high heat, add onions and jalapenos.  Saute until veggies are translucent.  Add beef and garlic to the skillet; cook for 1 minute.  Add beans and beef broth.  Bring to a boil, reduce heat and simmer for 20 minutes; or until thick.  Stir in cheese, cilantro and additional salt/pepper to taste (if needed).
